Vegetable Lettuce Wraps

Ingredients (2 servings per child)

  • 2 large iceberg lettuce leaves
  • 4 tbsp cous cous (pre-cooked in vegetable stock)
  • ½ tomato
  • ½ cucumber
  • 2 tbsp corn
  • ¼ red onion
  • ¼ red capsicum
  • Salt and pepper
  • 1 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp sour cream
  • Pinch dried parsley flakes


  1. Cut the tomato, cucumber and capsicum in small diced pieces.
  2. Place the diced vegetables in a small bowl.
  3. Measure the cous cous and corn and place into the bowl with the diced vegetables.
  4. Sprinkle with salt and pepper.
  5. Mix all vegetables and cous cous until well combined.
  6. In a small bowl, measure and place mayonnaise, Dijon mustard, sour cream and parsley. Mix until well combined.
  7. Place the iceberg lettuce leaves on the work bench.
  8. Spoon all vegetable and cous cous mixture into the centre of each lettuce leaf.
  9. Spread the mayonnaise mixture evenly on top of the vegetable mixture.
  10. Fold the bottom of the lettuce leaves over the vegetable mixture.
  11. Fold both sides of the lettuce leaves over the vegetables to enclose it.
  12. Roll the lettuce leaves over to make a roll.
  13. Enjoy!
