San Choy Bau

Ingredients (Serves 4) 

San Choy Bau 

  • 750g minced chicken or pork. 
  • 1 chopped red chili or ½ teaspoon of dried chili flakes (if desired) 
  • 2 tablespoons vegetable oil 
  • 2 cloves of garlic  
  • 3 tablespoons fish sauce  
  • 2 tablespoons lemon or lime juice 
  • 2 tablespoons Soy Sauce  
  • 1 large Ice-berg lettuce  
  • 200g of green beans  
  • 300g of mung bean sprouts 
  • 2 carrots  
  • 2 tablespoons of sesame seeds 
  • ½ cup coriander  
  • ½ cup mint leaves 
  • 1 spring onion  

Sweet Dipping Sauce 

  • ½ cup soy sauce  
  • ½ cup rice vinegar  
  • 2 tbsp honey  
  • 3 cloves garlic  
  • 2 tbsp fresh ginger 
  • 2 tsp sesame seeds  
  • 2 tsp sesame oil

Instructions 

San Choy Bau 

  1. Cut the chili and garlic into really fine pieces.
  2. Heat the oil in a large frying pan or wok.  Fry the chili, garlic and minced meat until the meat is cooked. 
  3. Measure and add fish sauce, lemon juice and soy sauce. 
  4. Stir well and cook for about 1 minute.   
  5. Taste and adjust flavour if you need to.
  6. Cut the beans into 1cm pieces. 
  7. Grate or cut the carrots into small pieces. 
  8. Add the beans, carrot and sesame seeds. 
  9. Stir well and cook for about 2 minutes. 
  10. Add the bean sprouts and stir. 
  11. Remove from the heat. 
  12. Cut the spring onion, coriander and mint into small pieces and add to the mince.  
  13. Stir well and taste to check for flavour. Adjust flavour as needed. 
  14. Remove core from ice berg lettuce and carefully remove leaves, one at a time. Each lettuce leaf should resemble a cup. 

Sweet Dipping Sauce 

  1. Crush and peel garlic cloves and mince or cut finely.
  2. Peel and grate the ginger. 
  3. Add the garlic, ginger, soy sauce, rice vinegar, honey, sesame seeds and sesame oil to a bowl and whisk together. 
  4. Set aside until ready to serve. 

 To serve: 

  1. You can either serve the meat mixture on a large platter/serving dish with the lettuce leaves on another platter and the sauce in a serving bowl, and everyone helps themselves.  
  2. Or place a couple of lettuce leaves cups on each plate and fill with a couple of spoonfuls of mince mixture. Drizzle a tsp of sweet dipping sauce over the top of each. 
  3. You could also serve the san choy bau with jasmine rice.
