Ingredients (Individual recipe)

  • 1 small chicken thigh fillet
  • 1 tbs grated parmesan cheese
  • 2 tbs flour
  • 1 small egg beaten
  • 1 tbs milk
  • Salt and Pepper
  • ¼ cup Panko breadcrumbs
  • Oil for deep fryer

 Coleslaw

 Ingredients (Individual recipe)

  • 1 large cabbage leaf (white and/or purple)
  • ¼ carrot
  • 5 cm piece spring onion
  • ¼ red apple

Bread Rolls

Ingredients (Individual recipe)

  • 1 Brioche bun or similar
  • Butter for spreading (if desired)

Equipment 

  • Grater
  • Knife
  • Peeler
  • Deep Fryer
  • Measuring spoons
  • Measuring cups
  • Egg whisk
  • Lunch size snap lock bag
  • Rolling pin
  • Plastic plate
  • Plastic bowl
  • Paper towel
  • Large oven tray

Process  - Chicken Schnitzels

1. Measure the flour and place onto a plastic plate. Season with salt. Set aside.
2. Crack their egg and place in plastic bowl. Measure and add milk to egg. Season with salt (and pepper if desired) Whisk the egg and milk until well combined. Set aside.
3. Measure and add the Panko breadcrumbs and parmesan to a plastic plate. Mix through until well combined. Set aside.
4. Line up all plates and bowls in order  Eg. Flour, egg mixture, Breadcrumb mixture.
5. Place chicken fillet inside their bag and seal.
6. Using a rolling pin, bash the chicken until it is 2-3mm thick.
7. Remove chicken fillet from the bag and season on both sides with salt (and pepper if desired. Place chicken into flour and coat well, ensuring chicken is totally covered.
8. Shake chicken fillet to remove excess flour and dip into the egg mixture. Ensure the chicken is totally covered with egg mixture.
9. Pick up chicken and let excess egg mixture drip off the chicken fillet and then place chicken fillet into breadcrumb mixture.  
10. Completely coat the chicken with breadcrumbs. Pat chicken fillet to ensure the breadcrumbs are covering the entire fillet.
11. Place the crumbed chicken schnitzel onto a plate and refrigerate until ready to fry.
12. Heat the oil in deep fryer to approx.. 170 or 180 degrees 
13. Fry chicken schnitzels, for approx.. 4 minutes or until completely golden.
14. Place on paper towels to drain. 

Process - Coleslaw

1. Cut coleslaw leaf/leaves into very thin slices. Place into small bowl.
2. Peel and grate quarter carrot. Add to bowl.
3. Cut spring onion on the diagonal into thin slices. Add to bowl.
4. Carefully cut red apple into thin matchsticks. No need to peel apple. Add to bowl.
5. Add as much dressing as desired to raw dressing. Recommended about 1 tablespoon.

Construction of Burgers

1. Using a bread knife, cut bun in half.
2. Butter brioche bun, if desired.
3. Place chicken schnitzel on one half of the bun.
4. Place dressed coleslaw on top of their chicken schnitzel.
5. Place the top bun over the coleslaw.
6. Chicken schnitzel and coleslaw burgers are ready to eat!
